Die gr\u00f6\u00dfte ist die sogenannte <a href=\"http:\/\/www.variedadesdeolivo.com\/vivero_planta_de_olivo\/290\/gordal_sevillana\/\"><strong><span style=\"color: blue; text-decoration: none; text-underline: none;\">Gordal<\/span><\/strong><\/a> und der kleinste der <a href=\"http:\/\/www.variedadesdeolivo.com\/vivero_planta_de_olivo\/76\/arbequina\/\"><strong><span style=\"color: blue; text-decoration: none; text-underline: none;\">Arbequina<\/span><\/strong><\/a>.<\/p><p>Die Gr\u00f6\u00dfensortierung erfolgt nach der Anzahl der Einheiten pro Kilogramm. Sie ist obligatorisch f\u00fcr ganze, entsteinte, gef\u00fcllte und halbierte Oliven. Innerhalb jeder Gruppe darf der Unterschied zwischen ihnen h\u00f6chstens betragen <strong>3 Millimeter<\/strong> im Durchmesser<strong>.<\/strong><\/p><p>Ab 150 Fr\u00fcchten pro Kilogramm darf der gr\u00f6\u00dfte Durchmesser den kleinsten nicht um 5 Millimeter \u00fcbersteigen. A 5%, die nicht genau dieselben Merkmale aufweisen, sind ebenfalls zul\u00e4ssig.<\/li><li><strong>ERSTE:\u00a0<\/strong>\u00a0Oliven von guter Qualit\u00e4t mit einem angemessenen Reifegrad<strong>.\u00a0<\/strong>Bis zu 10 % Oliven, die nicht der Klasse angeh\u00f6ren, aber den Anforderungen der Klasse 2 gen\u00fcgen, werden zugelassen.<\/li><li><strong>ZWEITENS:<\/strong>\u00a0Tafeloliven, die zwar nicht in die beiden vorgenannten Kategorien eingeordnet werden k\u00f6nnen, aber die allgemeinen Bedingungen f\u00fcr Tafeloliven erf\u00fcllen.<\/li><\/ul><p><em>Oliven f\u00fcr Salat<\/em>\u00a0o Salat-Oliven.<\/p><ul><li>Sie weisen einen Anteil an zerbrochenen Oliven von mehr als 10 % des Gewichts auf, das man erh\u00e4lt, nachdem man die abgetropften Oliven von der F\u00fcllung (Paprika oder Paprikapaste) und eventuellen Kapern getrennt hat.
