They are harvested at the right stage of ripeness and quality. It is mainly grown in Seville, Huelva and Extremadura. Its main use is for table olives as an aperitif. It is not very common to find oils of this variety.<\/li><li><strong>Gordal olives<\/strong>It is characterised by its large size. The texture is fleshy and the flavour is very intense due to its fermentation process. It is the table olive par excellence, due to its large size it can be stuffed or eaten alone.<\/li><li><strong>Verdial olive:\u00a0<\/strong>It is so called because when it has finished ripening it is still green in colour. There are 3 types: Verdial de Huevar, Verdial de V\u00e9lez-M\u00e1laga and Verdial de Badajoz.<\/li><li><strong>Lech\u00edn or Cuquillo olives:\u00a0<\/strong>It is so called because of its whitish colour. It has a mild apple flavour with bitter and slightly spicy hints.<\/li><li><strong>Hojiblanca olives:\u00a0<\/strong>It is characterised by its taste and aroma of freshly cut grass.
