This variety of olive tree is harvested mainly in Seville and Huelva, occupying some 60,000 hectares in Seville and has become the most international type of olive.<\/p>\n<p>The Manzanilla olive tree has a very high productivity and harvesting is done by hand, to avoid damaging the fruit. However, once in the factory, the best technologies are used for brining and packaging. The fruit is harvested before it is fully ripe, hence its green colour and its high resistance to detachment from the tree.<\/p>\n<p>The\u00a0<strong>manzanilla sevillana olives<\/strong>\u00a0<strong>Escamilla\u00a0<\/strong>is traditionally served as an aperitif, and has become the queen of tapas in our country.<\/p>\n<p>At Aceitunas Escamilla we have multiple ways of preparing this delicious fruit.
