Tips for preparing a good dressing

1. Eliminate bitterness

Today we would like to talk a little about dressings and how each variety of olive can be dressed.  Firstly, the dressing will vary greatly according to the degree of ripeness of the olive, i.e. whether the olive is green or black. 

The green olives can be split, cracked, whole or crushed, depending on the intensity of flavour you want to achieve and how long you want to keep them. Whole olives, for example, will keep longer, but will have less of the flavour of the dressing than split olives, which will absorb more flavour, but will last less time.

Caustic soda is used to remove the bitterness, which is the most modern way, although it can also be done by successive washes of water and then leaving them to soak in salted water for a while. The latter is a slower process. Once the bitterness has been removed, they are seasoned with the chosen spices.

2. The dressing

The seasoning is the most important phase. You give the olives that special, rich flavour.   • Sal.
  • 1/2 kg. of black olives.
  • 1 heaped tablespoon of hot paprika (can be mixed with sweet paprika).
  • 2 tablespoons vinegar.
  • Olive oil.
  • 2 large onions cut into pieces.

Garlic seasoning

  • Whole olives.
  • Crushed garlic.
  • Laurel.
  • Oregano.
  • Lemon wedges.
  • Sal.
