Pitted green olives: Ingredients

To prepare the meatballs you will need:

  • 800 grams of minced meat (pork, beef, chicken, turkey... whichever we like best).
  • 4 eggs.
  • 200 millilitres of milk.
  • 4 cloves of garlic.
  • 200 grams of breadcrumbs.
  • 1 large onion, diced.
  • ¼ red pepper.
  • Small spoonful of ground cumin.
  • Ground black pepper.
  • Pinch of salt.

To make the sauce you need:

  • 3 ripe tomatoes.
  • 1 grated onion.
  • 1 cup of Escamilla pitted green olives. We rinse them and then drain them.
  • 5 finely chopped cloves of garlic.
  • 2 tablespoons of olive oil.
  • teaspoon of sweet paprika.
  • Pinch of black pepper.
  • Salt to taste.
  • Parsley

Preparation

Meatball meat:

Place the minced meat in a bowl and add the 4 finely chopped cloves of garlic. Put the onion, ¼ of a red pepper and the parsley in the mincer. When the vegetables are chopped, add them. Add the 4 eggs and pour in the milk. Mix a little and add half the breadcrumbs, the pinch of cumin, black pepper and salt. Mix again until the bread has been thoroughly soaked. When everything is completely soaked, add the other half of the breadcrumbs and stir until the mixture is homogeneous. Leave this mixture to rest in the fridge for half an hour.

Salsa:

Cover the bottom of a frying pan or pot with olive oil. When it is at a low-medium temperature, add the grated onion and the 5 cloves of garlic, finely chopped. Stir to fry a little and add the three chopped tomatoes. After stirring a few times, add the paprika, parsley and salt to taste. Stir again and add the hot water. Turn up the heat until it boils and when it does, turn it down to low-medium heat. Cover and leave to cook for about 7 minutes. Then add the meatballs, stir and cover again for 15 minutes, stirring to cook the meat on all sides. After this time, pour in the cup of Escamilla pitted green olives and stir. Put the lid back on for 15-20 minutes. When this time has elapsed, we will have some delicious meatballs with green olives to eat.
