HOW TO CARRY OUT THE SEASONING ?

As a first step, we must be sure to wash the olives well, so that no residue from outside the fruit combines with our preparation. Then, we must put the olives in a container with water for 15 days at a time. It is also important to change the water every day to rinse them well.

After this time, it is time to season the olives. In a large bowl, add all or some of the above-mentioned spices and make sure they cover the entire skin of the olives. We add a brine (2 tablespoons of salt and 1 cup of wine vinegar for every litre of water) and two tablespoons of olive oil to intensify its flavour.

After that, all that is left to do is to arm oneself with patience and eWait 60 days before consuming whole olives.. This may seem like a long time, but in all honesty, it is well worth the wait. This is just one variant of the hundreds of ways to dress olives.. But whatever the method, the result is always the same: delicious olives.

Manzanilla olives from Seville are normally seasoned in brine by natural lactic fermentation. The highest quality of this speciality is found in the province of Seville because of the way they are harvested.

The traditional system known as milking means that the fruit does not suffer any damage. It avoids transport to distant areas and the short time it takes for the fruit to be harvested.

Its good size and shape stand out, together with the harmonious relationship between flesh and stone. It has a notable proportion of flesh to stone, which means that the stone is not too close, and also that it separates easily. Its oil content is moderate without acquiring prominence as is the case with the verdial. All these characteristics make the Manzanilla olive the favourite of many consumers.

What is the production and consumption of olives in Spain?

[/vc_column_text][vc_empty_space height=»20px»][vc_column_text]On the other hand, Spain is ranked number one in production and fourth in table consumption.
WORLDWIDE OLIVE CONSUMPTION

[/vc_column_text][vc_empty_space height=»20px»][vc_column_text]According to IOC (International Olive Oil Council) data, the average consumption of the last five seasons amounts to 3.185 million tons in 2020/21 and is distributed by country:

WORLDWIDE OLIVE PRODUCTION

[/vc_column_text][vc_empty_space height=»20px»][vc_column_text]

In the most important sectors of table olive production, Spain is ranked number one in the world, followed at a great distance by other countries such as Egypt, Turkey, Algeria, Greece, Syria and Morocco.

Spain - 21%.

Egypt - 17%.

Algeria - 9%.

Greece - 7%.

Syria - 5%.

[/vc_column_text][vc_empty_space height=»20px»][vc_column_text]These figures make it clear that most of the table olives we consume today are of Spanish origin. Taking this into account, if we add this together with their distribution and individual consumption between Western and Eastern countries, it leaves a high percentage of ownership that positions it very high not only in its own productivity and consumption, but also in quality.[/vc_column_text][vc_empty_space height=»20px»][/vc_column][/vc_row][vc_row css_animation=»» row_type=»row» use_row_as_full_screen_section=»no» type=»full_width» angled_section=»no» text_align=»left» background_image_as_pattern=»without_pattern»][vc_column][vc_column_text]

Olive Consumption Nowadays

[/vc_column_text][vc_empty_space height=»20px»][vc_column_text]On the other hand, the tables olives world production will grow by 2.5% in the present season 2020/21 with respect to the previous one, up to 3.134 million tons. Although other percentages cover around the world, the Sevillian olive is one of the most coveted and exported olives in the world, exceeding almost 30%. Its demand is high in both non-producing and table olive producing countries.

According to the MAP Food Consumption Panel, in 2017 national household consumption increased by 6.7%. For hotel and catering, there is no data available since 2011. Household consumption accounts for around 75% of national table olive consumption.

Whether due to the growing environment, its global positioning, weather conditions, among other things... The fact is that the consumption of table olives positions it as one of the most demanded and sold olive trees worldwide, with Spain being its main producer, exporter and 4th largest consumer.[/vc_column_text][vc_empty_space height=»20px»][/vc_column][/vc_row][vc_row css_animation=»» row_type=»row» use_row_as_full_screen_section=»no» type=»full_width» angled_section=»no» text_align=»left» background_image_as_pattern=»without_pattern»][vc_column][vc_column_text]If you are looking for a distributor of table olives, Escamilla is your company, we have different sizes of packaging for any type of company and at the same time we also sell to customers.
